    Northern Europe Dinner Menu

    Marinated herring served with finely sliced brown bread and butter, A typical Baltic dish

    A parsnip and golden apple creamed soup served with exquisite wild salmon, lightly smoked and marinated in whisky according to the ancient Russian tradition known as Balik

    Potato gnocchi, filled with venison, cooked in a game reduction and with a local cheese fondue

    Reindeer stew served with a sweet-corn and potato mousse and a red fruits sauce.

    Hallongömmor roughly translated as “the raspberries’ den” Swedish muffins filled with fresh raspberries

    Friday September 22nd 2017

    Quail legs in tempura (batter) served with a spicy soya sauce

    Tataki of Wagyu beef fillet, lightly seared, marinated, sliced thinly and served with a teriyaki sauce with balsamic vinegar from Modena and enoki mushrooms

    Tagliolini pasta made from buckwheat and flavoured with green tea, coregon, orange and caramelised red onions

    Yellow fin tuna fish, marinated in Hitachino beer, cooked in a sesame seed crust and served with crispy vegetables with a hint of saké

    Melonpan, a sweet bun covered in a layer of crisp cookie dough

    Coffee and friandises

    Aperitivo - Prosecco di Valdobbiadene - "De Faveri"

    Rosso -  Saloncello - "Conti Sertoli Salis"
